Description
Named best Canadian cheese in 2014 by the Canadian Fine Cheese Competition, this organic semi-soft washed-rind cheese is made from pasteurized milk. It is matured for 45 days. Under its orange rind lies an ivory-colored paste with a creamy texture and sweet farmhouse aromas of butter and herbs. On the palate, it is smooth and melting. It tastes of hazelnut, cream, butter and also has a hint of clover on the finish. Its flavor is slightly acidic and salty, without bitterness.
