This 100% sheep’s cheese tomme is immediately distinguished by its slightly irregular paste, the result of the special pressing necessary for a cheese of this type.Reminiscent of mountain tommes from regions like the Pyrenees, it is quite intense, aromatically, with a fairly mushroomy rind, with pronounced aromas.The texture on the palate is crystal clear, and the floral notes reminiscent of goldenrod, or even dandelion, are combined with a slightly resinous side on the one hand, reminiscent of a woody place where the cedars have held on well.
