Description
The inventive brothers Alonso, Toms and Javier produce this blue cheese in the province of Len, in the Picos de Europa, where the climate of Valden is less humid than that of Picn. The mold that blossoms produces a less intense flavor than other similar blues. La Valden is often sold under the name Picos de Europa.
The crust is wrapped in sycamore leaves.
FLAVOR: Spicy without being strong and fragrant with a touch of salt, it leaves an elegant aftertaste.
HOW TO TASTE IT: Enjoy it with hazelnuts, walnuts, prunes and port or cider. It is also excellent in sauce.
